Family Week at Decision Point is a great time for people to share their recovery process with the people closest to them while enjoying some food and fun. One of the days during the week, the other clients cook for the families. It is a great time to show off our culinary skills. Last week, we made a huge spread of Asian cuisine!
Family Week Menu
-Hand rolled vegetarian sushi
-Chicken lettuce wraps (think PF Changs- but better!)
-Thai peanut pasta salad with veggies
-Green salad with toasted sesame dressing
The families loved the meal and we always provide them with recipes to bring home with them. I thought I would share one with you as well.
Chicken Lettuce Wraps
-2 tablespoons apple cider vinegar
-2 tablespoon dark sesame oil
-2 tablespoon hoisin sauce
-2 tablespoon gluten free tamari
-2 tablespoon honey
-4 teaspoons sriracha chili sauce
-4 cloves garlic minced
-4 tablespoon ginger minced
Mix together and set half aside.
Mix half of the sauce in with the following and cook in skillet until meat is cooked.
-1 pound ground chicken, pork or turkey
-3 tablespoon green onion minced
-2 tablespoon chopped cilantro
-4 tablespoons carrot minced
-½ chopped zucchini
-1 cup chopped swiss chard or kale
-¾ cup chopped mushrooms
Put in fresh Boston or butter lettuce leaves and serve with cilantro and extra sauce if desired.
